The name comes from a beautiful type of Agamid lizard, the Hydrosaurus, native to islands in the Philippines and Eastern Indonesia. Scott has been a pioneer in the husbandry of these amazing prehistoric-like creatures for the past 35 years, contributing to many research articles around the world. Nikki has been a Certified Registered Nurse Anesthetist for the past two decades, but her love of brewing has grown exponentially over the past 10 years. She completed The USF St Pete Brewing Arts Program in 2019 to further her knowledge of the craft, in order to create the best beer possible for Hydrosaurus Brewing.
Scott and Nikki also have a great love for music (the couple met in music school in 1989), and will incorporate music into the brewery on many levels. With nearly two acres of land surrounding the brewery and biergarten, there is much room for expansion and outdoor events. Construction of the brewery/taproom is currently underway, we hope to open our doors to the public in the late 2024!
